To create the spinach and feta stuffed rotolo with creamy thyme sauce, start by making the pasta dough. mix whole wheat flour, all-purpose flour, egg, and a pinch of salt in a bowl until the dough forms. knead it until smooth, cover with a cloth, and set aside.
Blanch the spinach leaves in boiling water for a minute. drain and refresh under cold water. squeeze out excess water and chop the blanched spinach.
Saute chopped garlic in a little olive oil until fragrant. add the chopped spinach and cook for a couple of minutes. season with salt and black pepper.
In a separate bowl, crumble the feta cheese and mix it with the saute spinach and garlic mixture. adjust the seasoning if needed.
Roll out the pasta dough into a thin sheet. spread the spinach and feta mixture evenly over the dough.
