Wash and soak the moong dal in water for about 2 hours. then, drain the water and keep the dal aside.
In a food processor, add the soaked moong dal, coriander leaves, curry leaves, green chilies, ginger, cumin seeds, and a pinch of salt. grind them together to form a coarse mixture.
Transfer the ground mixture to a bowl. add finely chopped spring onion and onion to the mixture. mix well to combine all the ingredients.
Heat oil in a deep pan or kadhai for frying.
Take small portions of the mixture and drop them gently into the hot oil. fry the pakodas until they turn golden brown and crispy.
