To prepare the spicy ghee roasted mushrooms, start by marinating the mushrooms. in a mixing bowl, combine the mushrooms, yogurt, turmeric powder, and lemon juice. mix well and set aside for a minimum of 30 minutes.
Meanwhile, let's prepare the ghee roast masala. heat a skillet on medium heat and dry roast the red chillies, black pepper, cloves, fenugreek seeds, coriander seeds, and cumin seeds for about 4-6 minutes, or until their aroma is released. turn off the flame and allow the spices to cool down.
Transfer the roasted spices, garlic cloves, and tamarind paste to a mixer jar and grind into a smooth paste using some water. this is the ghee roast masala. set it aside.
In a kadai or skillet, heat the ghee on medium flame. add the curry leaves, and when they splutter, add in the marinated mushrooms along with the marinade. cook on medium-high heat.
The mushrooms will release some water. allow them to cook until the water is almost evaporated, and the mushrooms are well done.
