To create the spiced taro root delight, peel the taro roots and boil them in a pressure cooker with enough water for 2 whistles.
Once the pressure has released naturally, drain the water and cut the boiled taro roots into halves.
Heat a pan with oil and add mustard seeds and split yellow lentils. let them splutter for about 10 seconds.
Afterward, introduce curry leaves and dried red chilies to the pan. let the curry leaves crackle for another 10 seconds.
Add the halved, boiled taro roots to the pan. sprinkle chickpea flour, red chili powder, turmeric powder, salt, and dry mango powder (amchur) over the taro roots.
