To prepare the spiced soya chunks biryani, start by marinating the soya chunks. soak the soya chunks in hot water for 10-15 minutes, and then drain the water.

In a bowl, mix the soaked soya chunks with ginger garlic paste and half a teaspoon of turmeric powder (haldi). let them marinate for about 15 minutes.

Meanwhile, rinse the basmati rice under running water until the water runs clear. soak the rice in water for 30 minutes and then drain.

Heat sunflower oil in a large pot or pressure cooker. add the bay leaves, cardamom (elaichi), cloves, organic cinnamon (dalchini), star anise, and mace (javitri). saute the whole spices for a minute until they release their aroma.

Add the sliced onions and green chillies. saute until the onions turn golden brown.
