Begin by preparing the ingredients needed for the chole biryani.
For the fried onions: heat oil in a kadai on medium flame, add the sliced onions, and fry them until they turn deep brown. this caramelization process takes about 10 minutes, so maintain a low flame for even browning. once done, remove the caramelized onions and drain them on absorbent paper.
For the roasted potatoes: in the same kadai, add more oil and pan roast the potato cubes until they get a light brown color. sprinkle some salt and a pinch of turmeric powder to add flavor. drain the roasted potatoes on absorbent paper and transfer them to a bowl. sprinkle cumin powder, red chili powder, and dry mango powder on the potatoes, and toss to coat them evenly.
For the rice: in a pan, heat ghee on medium flame and add cardamom, cloves, bay leaves, and cinnamon. stir for a few seconds and then add milk and water. bring it to a rolling boil. reduce the flame, add the drained rice, cover, and cook until the moisture is fully absorbed. once cooked, turn off the flame and set aside to cool.
After the rice has cooled down, add coriander leaves, mint leaves, fried onions, and roasted potatoes. mix well to combine all the flavors.
