To prepare spicy chicken dum biryani, start by preparing the rice separately. wash and soak the basmati rice in water for 20 minutes.
Meanwhile, in a large vessel, bring about 3 liters of water to a boil. add 1 teaspoon of cooking oil and 1 teaspoon of salt to the boiling water.
Drain the soaked and rinsed rice and add it to the boiling water. stir gently and cook for about 3 to 5 minutes (remove from heat around 3.5 minutes). be cautious as the cooking time may vary depending on the rice brand.
Drain the cooked rice immediately and spread it on a large plate to cool.
In a deep-bottomed pan, heat 2 tablespoons of sunflower oil over medium flame. add 1 sliced onion and fry until it turns brown (be careful not to burn it). set aside the browned onions for garnishing.
