To prepare the mediterranean hummus veggie sandwich, start by chopping all the vegetables and preparing the green chili and coriander pastes.
In a mixing bowl, combine the green chili paste and coriander paste with homemade hummus. add a few drops of lemon juice and mix well to create an even paste.
Spread this hummus mixture on one side of each bread slice.
Place lettuce leaves on top of the hummus spread.
Now, layer the sliced onions, cucumber, tomato, and sweet pepper on the lettuce leaves. season with salt, pepper, and a dash of lemon zest or sumac, if desired.
