To prepare nutty besan delight, start by heating a deep non-stick pan or kadai. add milk powder and roast over medium heat until it releases a delightful aroma and turns lightly golden. transfer it to a bowl and set aside.
In the same pan, add clarified butter (ghee) and allow it to heat up slightly.
Incorporate chickpea flour (besan) and roast over medium heat, stirring continuously.
After about four to five minutes, you'll notice the besan becoming frothy and bubbly.
Continue stirring and roasting for 6 to 8 minutes until the froth subsides, most bubbles disappear, and it turns golden and aromatic.
