To begin with the crispy baby corn and tofu with orange-peanut sauce, blanch the baby corn in hot water for 3 minutes to soften them. cut the tofu into 1/2-inch cubes.
In a bowl, combine the baby corn, tofu, and all the marinating ingredients. mix well and let it marinate for about an hour.
In a separate bowl, make a stiff batter by mixing corn flour and water.
Coat each baby corn and tofu cube with the batter and then roll them in rice flour.
Heat oil in a wok and fry the coated baby corn and tofu until they turn golden and crispy. remove them from the oil and set aside.
