To prepare the spicy cucumber salad, take a large bowl and mix together the cucumbers, freshly grated coconut, and coriander leaves.
Add salt according to your taste preferences and mix all the ingredients well.
Next, add the curd to the cucumber mixture and toss it gently to ensure the cucumbers are evenly coated with the curd. set it aside.
In a small pan, heat oil and add mustard seeds. let them crackle for about 10 seconds.
Then, add asafoetida, finely chopped green chilli, and curry leaves. saute for another 15 seconds.
