In a small pan, combine the tamarind pulp, sugar, cumin, and grated ginger. pour 75ml of boiling water over the mixture. simmer the dressing without a lid for about 10-15 minutes until it thickens and becomes syrupy. adjust the sweetness by adding more sugar if desired.
While the dressing is cooking, bring a large pan of salted water to a boil. add the new potatoes and cook for approximately 15 minutes or until they are tender. drain the potatoes and allow them to cool slightly before halving them.
Transfer the halved potatoes to a large mixing bowl. spoon the tamarind dressing over the potatoes and gently stir to ensure they are evenly coated. drizzle the low-fat yogurt over the potatoes and sprinkle with chopped coriander.
Serve the tangy tamarind potato salad warm or at room temperature.
