To begin preparing spicy tomato fennel vermicelli, heat a pan with cooking oil over medium heat. add mustard seeds, cinnamon stick, cloves, and curry leaves. let them sizzle and release their aroma.
Stir in finely chopped onions, ginger, and minced garlic. saute them for a couple of minutes until the onions become translucent.
Once the onions are soft, add diced tomatoes and saute for a few seconds until they start to soften.
Add fennel seeds, black peppercorns, turmeric powder, and red chilli powder. cook until all the spices are well combined.
Incorporate fresh mint leaves and vermicelli into the mixture. add salt to taste.
