In a bowl, mix together all the marinade ingredients except rice flour and corn flour. rub the mixture over the chicken wings and refrigerate for 4 hours or overnight for best results.

While the chicken is marinating, prepare the dipping sauce. heat oil in a pan and add star anise. stir for 30 seconds, then add shallots and cook over high heat for 2-3 minutes, stirring continuously. add pineapple and continue cooking over high heat for another 2 minutes until the pineapple caramelizes and softens slightly. reduce the heat, add ginger, tomato ketchup, soy sauce, sugar, and 120ml of water. bring to a boil and cook for 1-2 minutes until the sauce becomes glossy. check the seasoning, remove from heat, and add lime juice. let it cool and set aside.

To make the green chilli mayo, blend green chillies and coriander with oil in a blender until smooth. whisk together egg yolk and mustard, then gradually add the blended chilli-coriander oil while whisking to create an emulsion. season with salt and lemon juice. set aside.

Once the chicken has marinated, drain any excess liquid. in a separate bowl, mix rice flour and corn flour. dredge the chicken wings in the flour mixture, ensuring they are coated evenly.

Heat vegetable oil to 180ÔøΩc and fry the chicken wings in small batches for 6-7 minutes or until cooked through and crispy. avoid overcrowding the oil to maintain crispiness.
