Preheat the oven to 200ÔøΩc (400ÔøΩf) or gas mark 6. cut the onions in half from top to bottom, keeping the skin intact.
Place the onion halves in a roasting tin, arranging them in a single layer. drizzle the virgin olive oil over the onions.
Sprinkle the sea salt and black pepper evenly over the onions.
Roast the onions in the preheated oven for 20-40 minutes, turning them once halfway through cooking. the onions should become tender and caramelized.
Once cooked, remove the onions from the oven. to serve, cut off the root end of each onion half and gently squeeze the roasted onion out of its skin. discard the skin.
