To begin making the saffron and pistachio kulfi, we will first condense the milk. in a heavy-bottomed saucepan, bring the milk to a boil.
Once the milk starts boiling, reduce the heat to low and let it simmer. stir the milk continuously to avoid burning and reduce it to more than half of its original quantity. this process will take some time, so be patient.
As the milk reduces to about more than half, stir in the sugar until it completely dissolves.
Add the saffron strands and cardamom powder to the milk mixture. also, add the chopped pistachio nuts to give the kulfi a delightful crunch and flavor.
Turn off the heat and allow the kulfi mixture to cool completely.
