To prepare foxtail millet and moong dal pongal, start by dry roasting the foxtail millet and moong dal in a hot kadai until it releases a pleasant aroma.

Wash the roasted foxtail millet and moong dal together and soak them in water for about 1 hour. this step will aid in faster cooking.

In a pressure cooker, add the soaked foxtail millet, moong dal, 4 cups of water, and whole green chilies. pressure cook for 3-4 whistles or until they become soft.

Once the pressure is released, remove the cooker lid and mash the cooked mixture using a ladle to achieve a smooth consistency.

In a deep bottom pan, add ghee and roast the cashews until they turn golden brown. set the roasted cashews aside.
