In a large pot, boil the skimmed milk until it reduces in volume by approximately one-fourth.
Heat olive oil in a kadai (wok) and add the whole wheat vermicelli. stir gently to prevent burning.
Pour in the reduced milk and add saffron threads, sunflower seeds, cardamom powder, and a pinch of nutmeg. cook the mixture for about 5 minutes, allowing the flavors to blend.
Stir in the sugar substitute according to your desired sweetness. taste and adjust if needed. lastly, add chopped almonds and pistachio nuts.
Serve the healthy sheer kurma immediately, and enjoy the rich and flavorful dessert.
