To prepare the watermelon rind coconut dosa, start by washing and soaking the idli rice in water for about 2 hours until it softens.
In a separate bowl, wash the poha thoroughly and drain using a strainer.
Using a mixer grinder, blend the watermelon rind and freshly grated coconut into a smooth paste.
Transfer the blended mixture into a mixing bowl.
Add the soaked poha and idli rice to the bowl containing the watermelon rind and coconut paste.
