To prepare the creamy cucumber tzatziki, start by removing the whey from the yogurt. hang the yogurt in a cloth sieve strainer, placed over a bowl, and refrigerate it overnight. this process will thicken the yogurt, giving it a creamy texture.
Once the yogurt is thick and creamy, transfer it to a large mixing bowl.
Finely chop the cucumber and add it to the yogurt along with minced garlic, chopped parsley, a drizzle of olive oil, salt, and a dash of freshly pounded black pepper.
Stir well to combine all the ingredients, ensuring the flavors are well incorporated.
