Start by peeling and washing the yellow cucumber. cut it into two halves and remove the seeds.
Finely chop the cucumber and set aside.
In a pan, heat olive oil. add mustard seeds, fenugreek seeds, and urad dal.
Once the mustard seeds start crackling, add green chillies, curry leaves, and asafoetida. sautËúÖ until fragrant.
Allow this tempering to cool to room temperature.
