To prepare the tangy tamarind gojju, heat oil in a deep pan.
Once the oil is hot, add mustard seeds, fenugreek seeds, curry leaves, hing (asafoetida), and sliced green chilies.
Saute the ingredients until the mustard seeds start to splutter and the fenugreek seeds turn slightly brown.
Add the tamarind paste, jaggery, and red chili powder to the pan. let the mixture cook for about 2 minutes, stirring well.
Pour 2 cups of water into the mixture and allow it to boil for approximately 15 minutes. this will help to combine all the flavors.
