To prepare the spicy cumin & black pepper prawns, start by making the spice paste. grind ginger, garlic, turmeric powder, dry red chillies, whole black peppercorns, salt, and malt vinegar with about 2 tablespoons of water to form a smooth spice paste.
Marinate the prawns with the prepared spice paste and add some additional salt as needed. set aside to let the flavors infuse.
In a kadai or a large skillet, heat the sunflower oil over medium-high heat. add the curry leaves and sliced onions.
Stir occasionally and cook until the onions caramelize and turn golden brown.
Add the ripe tomato paste or chopped tomatoes to the kadai. cook on medium heat until the tomatoes become mushy and blend well with the onions.
