To prepare the herbed potato & spinach frittata, start by preheating your oven to 180Êû≥c (350Êû≥f).
In an oven-safe skillet, heat olive oil and butter over medium heat.
Add the sweet potatoes, peeled and thinly sliced, to the skillet. season them with salt and pepper. cook for about 15-20 minutes, turning occasionally, until the sweet potatoes are tender and lightly browned.
While the sweet potatoes are cooking, whisk the eggs in a bowl until well combined. season with a pinch of salt and pepper.
Once the sweet potatoes are cooked, arrange the fresh spinach leaves evenly over them in the skillet.
