Wash the basmati rice under running water and soak it for 30 minutes. then, drain the water and set the rice aside.
In a pan, melt butter over medium heat. add cumin powder, coriander powder, and minced garlic cloves. saute for a minute until fragrant.
Add sweet corn, chilli flakes, torn basil leaves, and sliced green chilli to the pan. saute for a few minutes until the corn is cooked and the flavors are well combined.
In a separate pot, heat virgin olive oil over medium heat. add chopped onions and sliced button mushrooms. saute until the onions turn translucent and the mushrooms are tender.
Add chopped ripe tomatoes, tomato puree, red chilli powder, garam masala, dried oregano, whole peppercorns, and salt to the pot. cook for a few minutes until the tomatoes break down and the mixture thickens.
