Tear the brown bread into pieces and place it in a large mixing bowl. add sultanas, tutti frutti, chocolate chips, mixed peel, and mixed spice.
Pour in the skimmed milk and mix everything together using a wooden spoon. gently scrunch the mixture through your fingers to combine the ingredients and break up the bread.
In a separate bowl, beat the egg. then add it to the bread mixture along with brown sugar and lime zest. stir well to ensure all the ingredients are evenly distributed. allow the mixture to sit for 15 minutes, allowing the bread to soak up the flavors.
Preheat the oven to 180c/350f/gas mark 4. butter the base and line a 20cm square cake tin with parchment paper. stir the melted butter into the bread pudding mixture.
Transfer the mixture to the prepared tin, spreading it evenly. bake for 1 hour or until the pudding is firm and golden brown. check the pudding halfway through the cooking time.
