In a mixing bowl, combine besan, cornflour, salt, and chilli powder. stir to mix well. add the lemon juice, lemon zest, grated cheddar cheese, chopped jalapeno, and eggs. mix everything together until you have a thick batter consistency. finally, add fresh cream, spring onions, corn kernels, and fresh coriander. stir well to achieve a batter of dropping consistency.
Heat canola oil in a frying pan over medium heat. use an ice cream scoop or spoon to drop scoops of batter onto the pan, shaping them into fritters and flattening them with the back of a spatula. cook on one side until golden brown, then flip the fritters and cook until golden brown on the other side. transfer the cooked fritters to a paper towel-lined platter.
Repeat the process with the remaining batter, adding more oil to the pan if necessary.
To make the zesty dipping sauce, whisk together mayonnaise, sour cream, lemon juice, grated cheddar cheese, fresh coriander, salt, and sugar in a bowl until well combined.
