To begin preparing the mexican omelette with avocado salsa, heat a pan and add some olive oil.
Saute onions in the pan until they become transparent, then add the sliced bell peppers and salt to taste.
Remove the pan from the heat and set the vegetable mixture aside.
In a separate bowl, prepare the avocado salsa by mashing the avocado fruit and adding chopped red chilies (optional), curd, lemon zest, and lemon juice. mix well.
Stir in a handful of chopped coriander leaves and add salt according to your taste. set the avocado salsa aside.
