To prepare the dosa batter, wash and soak urad dal with fenugreek seeds in enough water for about 4 hours. wash and soak red rice, toor dal, chana dal, and poha in enough water for 6 hours or overnight.
Once everything is soaked, grind the urad dal mixture with little water until it becomes silky smooth using a mixer or stone grinder.
Transfer the ground urad dal mixture to a large mixing bowl.
Now grind the rice and dal mixture slightly coarsely with little water in the mixer grinder and add it to the urad mixture.
Add 2 cups of rice flour to the bowl and mix all the ingredients to form a batter with a consistency between thick and flowy.
