To prepare the sesame seed potato stir-fry, heat oil in a heavy-bottomed pan.
Once the oil is hot, add ginger paste and green chili. saute for a minute, taking care not to burn them.
Add sesame seeds to the pan and saute for a while until they turn slightly golden.
Add the potatoes to the pan and toss them for about 2 minutes, ensuring they are coated with the ginger, chili, and sesame mixture.
Sprinkle red chili powder, cumin powder, coriander powder, garam masala, and salt. mix well and saute for 3-4 minutes on low flame.
