In a mixing bowl, combine the sweet potatoes and green bell pepper. drizzle them with a teaspoon of olive oil and sprinkle some salt.

Spread the coated sweet potatoes and peppers on a greased baking sheet placed on a tray. roast them in the preheated oven for approximately 20-25 minutes or until the sweet potatoes are soft and nicely roasted. once done, remove from the oven and set aside.

In a blender, combine the ripe tomatoes, jalapenos, and garlic cloves. blend until you achieve a smooth paste.

To cook the red lentils, take a saucepan and add the lentils along with water. bring it to a brisk boil and then reduce the heat to low.
