To prepare the sweet potato gulab jamun with fragrant syrup, start by boiling the sweet potatoes in a pressure cooker. once cooked, peel and mash them well using a fork or your hands.
In a mixing bowl, combine the mashed sweet potatoes, all-purpose flour, and a pinch of salt. mix everything thoroughly to form a soft and smooth dough.
Pinch small lemon-sized portions from the dough and slightly flatten them. place around 1/4 teaspoon of sugar in the center of each portion. close and roll the dough to form smooth balls, ensuring the sugar is enclosed within.
Continue making 12 to 15 such sweet potato balls and set them aside.
Meanwhile, prepare the fragrant sugar syrup. in a kadhai, heat 2 cups of sugar with 1 cup of water and boil until the sugar completely dissolves.
