To begin making the spicy achari amla mirchi sabzi, heat a pressure cooker with oil and add the cubed gooseberries and green chillies.
Mix in the achari seasoning, red chilli powder, turmeric powder, and salt. save the jaggery for later.
Add about 1/4 cup of water, close the pressure cooker with its lid, and cook for 2 whistles. then, turn off the heat and allow the pressure to release naturally.
Once the pressure is released, open the lid and place the pressure cooker back on the stove.
Add the jaggery to the cooked gooseberries and continue cooking until the sabzi dries up a bit.
