To prepare the green moong sprout chaat with mint chutney, first, heat a teaspoon of oil in a preheated pan. add mustard seeds and cumin seeds and allow them to crackle.

Once crackled, add ginger, curry leaves, green chillies, and turmeric powder. stir for a few seconds.

Add the sprouted green moong dal, salt to taste, and 2 to 3 tablespoons of water. cover the pan and allow the sprouts to soften slightly.

Ensure the sprouts are soft but still hold their shape and are not mushy.

Squeeze the juice from one lemon, stir in chopped coriander leaves, and set aside.
