In a large mixing bowl, combine the marinade ingredients. mix well, then add the chicken pieces and coat them with the spiced yogurt. allow the chicken to marinate for at least an hour, preferably overnight.
Using a blender, grind the garlic, ginger, and bird's eye chilli with a splash of water. set aside. heat ghee in a large nonstick saucepan over medium heat. add cumin seeds and cardamom pods. fry for a few seconds until they release their aroma.
Add the chopped onions and fry for 7-8 minutes until they begin to change color and release their moisture. add the garlic-ginger-chilli paste and fry for 1 minute, stirring well. stir in the kashmiri red chilli powder.
Now add the marinated chicken along with any remaining marinade. increase the heat slightly and stir well to seal the chicken pieces as they cook for 6-7 minutes. season with salt to taste.
Reduce the heat to low and simmer with a lid on for 20 minutes. stir halfway through to ensure it doesn't stick to the bottom of the pan. add a splash of water if needed.
