To create the fragrant udupi spice blend, heat coconut oil in a pan over medium heat.
Start by adding chana dal and sautËúÖ for about 20 seconds until it starts to turn golden.
Next, incorporate urad dal and roast it for another 15 seconds until it becomes fragrant and slightly golden.
Now, introduce coriander seeds and cumin seeds. roast for 10 seconds until they release their aroma.
Add fenugreek seeds and curry leaves, and continue roasting for another 10 seconds.
