To prepare tofu and mixed sprouts thai noodles, start by draining the tofu and placing it on a plate. put another plate on top and weigh it down to remove excess liquid. allow it to drain completely.
In a pot, bring water to a boil for cooking the rice noodles.
Once the water is boiling, add the rice noodles, turn off the heat, and let them sit in the hot water for about 7 minutes until they become soft. then, drain and set aside.
In a small bowl, whisk together soy sauce, brown sugar, and red pepper flakes to prepare the sauce. set it aside.
Heat a non-stick skillet or wok over high heat. add a tablespoon of sesame oil and stir-fry the onions until they turn brown.
