In a pan, add 1 liter of water along with soya nuggets, soy sauce, salt, garlic, onions, green chilies, and ginger. bring it to a boil, then reduce the heat and simmer for 5-7 minutes or until the soya chunks become tender. once they are soft, increase the heat to evaporate all the water. remove from heat and spread the cooked soya chunks on a tray to cool completely.

Once the soya chunks have cooled completely, fry them in hot oil. add them individually into the oil to prevent sticking. fry them on high heat until the outer coating is cooked and crisp. remove and place them on an absorbent paper to drain excess oil. set aside.

For the chili manchurian sauce, heat a pan and add oil. add dry red chilies and stir briefly, then add garlic, ginger, and onions. saute for a minute. add green chilies and capsicum, and toss for another minute. pour in chili sauce, soy sauce, tomato ketchup, vinegar, and salt. stir well on high heat.

Add the fried soya balls and spring onions to the sauce. keep tossing or stirring until the sauce coats the soya balls evenly. if you prefer to serve it as a dry snack, remove from heat, sprinkle some chopped coriander and spring onions on top, and serve.

If you want to serve it with sauce, add 3 cups of water to the pan and bring it to a boil. in a separate bowl, dissolve cornstarch in 3 tablespoons of water to make a thin slurry. add the slurry to the boiling sauce and cook until the sauce thickens. turn off the heat and garnish with more spring onions and chopped coriander. serve the spicy soya manchurian hot.
