To prepare the roasted beetroot and sprout subway sandwich, start by cooking the grated beetroot. heat a teaspoon of oil in a wok and add the grated beetroot and minced garlic. sprinkle some salt and stir-fry on low to medium heat until the beetroot is softened and cooked.
Once the beetroot is cooked, turn off the heat and allow it to cool completely.
In a large mixing bowl, combine the cooled beetroot, greek yogurt or hung curd, coriander leaves, chopped spring onions, salt, and pepper. mix well to make the beetroot mixture.
Toast the subway bread or footlong pieces in a skillet with butter or olive oil until lightly warmed and crisp. cut them in half after toasting.
Place the cut and toasted subway bread on a flat surface.
