Prep the veggies: begin by preparing the fresh and crunchy veggies. grate the carrot, finely chop the tomato, and thinly slice the cucumber and onion. set these vibrant ingredients aside.
Besan batter creation: in a mixing bowl, combine besan flour, rice flour, finely chopped onions, coriander leaves, green chillies, carom seeds, red chilli powder, turmeric powder, and a pinch of salt. mix well.
Batter fusion: gradually add water to the dry ingredients, creating a smooth and slightly thick batter. make sure the batter coats the back of a spoon without being too runny.
Bubbles of delight: just before frying, add fruit salt to the batter. this will create delightful bubbles, adding an airy texture to the pakoras. gently mix the batter after adding fruit salt.
Frying delight: in a deep frying pan, heat sunflower oil for frying. once the oil is hot, carefully dip the prepared vegetable slices into the batter, ensuring they are coated evenly. gently place these coated veggies into the hot oil.
