To begin making the mini chana dal pakora chaat, let's start by making the pakoras. in a mixing bowl, sift together wheat flour, gram flour, ajwain, cumin seeds, salt, and ghee. mix well to form a smooth dough, adding water if needed.
Heat oil in a deep pan for frying. take small portions of the dough and drop them into the hot oil. fry until golden brown and crispy. remove from oil and drain on paper towels.
Next, prepare the chana dal. wash and soak chana dal in water overnight or for at least 4 hours. drain the water and cook the chana dal in a pressure cooker with 2 cups of water, salt, turmeric powder, garam masala, red chilli powder, dry mango powder, and sugar. cook for a few whistles until the dal is soft and cooked.
In a tadka pan, heat ghee over medium heat. add cumin seeds, green chillies, curry leaves, and asafoetida. saute for a few seconds and then pour this tempering over the cooked chana dal. mix well.
To assemble the chaat, place the mini pakoras on serving plates. top each pakora with a spoonful of the cooked chana dal. drizzle some date chutney and green chutney over the dal. garnish with chopped onions, pomegranate seeds, and sev.
