To prepare the veggie-packed yogurt tortilla roll-ups, thinly slice all the vegetables to equal lengths and set them aside.
In a mixer-jar, combine the greek yogurt, garlic, fresh coriander leaves, black pepper powder, and salt to taste. blend until you get a smooth sauce.
Transfer the sliced vegetables to a bowl and toss them in the prepared greek yogurt sauce until well coated.
Heat a skillet and warm the tortillas on both sides, one by one. set them aside.
To assemble the roll-ups, take a tortilla and place about 2 to 3 tablespoons of the yogurt-coated vegetable filling in the middle of the tortilla.
