To prepare the instant tamarind rice powder, heat a pan over medium heat. dry roast chana dal, urad dal split, coriander seeds, red chillies, black pepper, white sesame seeds, flax seeds, sunflower seeds, melon seeds, and fenugreek seeds until the dals start to roast and release aroma. turn off the heat and set aside.
In the same pan, heat 1 teaspoon of sesame oil and roast the red chillies for half a minute on low heat. allow it to cool.
Lightly roast the tamarind in the pan for just one minute on low heat. set it aside.
In a separate pan, heat the oil over medium heat. roast the peanuts for 2-3 minutes until they turn crunchy. remove and set aside.
In the remaining oil, fry the curry leaves until they become crisp. do not let them brown. remove the curry leaves and add mustard seeds to the remaining oil. once the mustard seeds crackle, remove them from the heat.
