How To Cook?

To prepare the malabar lamb biryani, start by soaking basmati rice in water for 10-15 minutes.

In a mixer grinder, make a smooth paste of the biryani masala ingredients - green chillies, ginger garlic paste, coriander leaves, mint leaves, cumin seeds, bay leaves, cashew nuts, raisins, black peppercorns, cloves, and organic cinnamon.

In a heavy-bottomed pot or kadai, heat ghee and saute sliced onions until they turn golden brown and caramelized. set aside some caramelized onions for later use.

In the same pot, saute the tomatoes until they become mushy. then add ginger garlic paste, curd, and the freshly ground biryani masala paste. cook until the raw smell disappears.

Add the lamb pieces to the masala and cook with the lid closed until the lamb is tender and cooked through.
