In a mixing bowl, combine besan, turmeric, chilli powder, baking powder, carom seeds, and salt. gradually add water while whisking to ensure there are no lumps. the batter should have a smooth consistency similar to single cream. add chopped green chillies, coriander, onions, and tomatoes to the besan mixture. mix well and set aside.
Heat a small non-stick frying pan over low heat and add a teaspoon of oil. swirl the pan to coat it evenly. using a ladle, pour the batter onto the hot pan. spread it thinly with the back of the ladle if needed.
Fry the chilla for 3-4 minutes on each side over low heat until it turns light brown and crisp around the edges. keep the cooked chilla warm by wrapping it in foil or a tea towel while making the remaining ones.
Serve the spiced besan chilla warm with pickle, salad, or green chutney.
