To begin making the pistachio coconut burfi, soak the pistachio nuts in warm water for about 30 minutes. this will soften them and make them easier to blend.
Drain the soaked pistachios and place them in a blender along with the fresh coconut. blend until you achieve a smooth burfi mixture with a slight texture.
Set the mixture aside.
In a medium-sized saucepan, combine the sugar and 1/4 cup of water. place the pan on medium heat and stir until the sugar has completely dissolved.
Continue boiling the sugar syrup until it reaches a two-string consistency. to test the consistency, drop a small amount of the syrup into a bowl of cold water. it should form two strings and hold its shape like a softball.
