In a mixing bowl, cream together the peanut butter and honey until well combined.
Stir in the whey protein powder and quick-cooking oats. add the almond milk to help the dough come together easier. if the dough seems too dry, you can add an additional tablespoon of almond milk. the dough should be stiff and not too wet.
Press the dough into a lightly oiled 9x9-inch pan. you can use plastic wrap over the dough to prevent it from sticking to your hands.
Sprinkle the pistachio nuts evenly over the dough and press them into the surface.
In a microwave-safe bowl or small pot on the stove, melt the dark chocolate chips with the coconut oil in 30-second increments until smooth and melted.
