In a pan, place the dried figs along with any liquid they may have, and add agar agar (china grass). cook until the figs are tender and the agar agar has dissolved. adjust the water as necessary, ensuring there is enough liquid to cover the figs once they are cooked (approximately 1/2 an hour).

Remove the pan from heat and mix in the cinnamon. allow the mixture to cool.

Once the mixture has cooled down, add the skimmed milk powder and blend it in a blender until smooth. transfer the mixture into serving dishes.

Garnish the mousse with walnuts.

Refrigerate the mousse until it sets.
