To begin making the decadent chocolate espresso mousse, melt the dark chocolate in a heatproof bowl placed over a pan of simmering water, ensuring the bowl doesn't touch the water.
Stir in the espresso coffee and vanilla extract until the chocolate is smooth and well combined. set aside to cool.
In a separate bowl, whisk the egg yolks and sugar until thick and pale yellow in color.
Place the bowl with the egg yolk mixture over the pan of simmering water and continue whisking until the mixture becomes thick and fluffy, similar to a marshmallow consistency.
Remove from the heat and whisk the egg yolk mixture into the cooled chocolate mixture until fully incorporated. allow the mixture to cool completely.
