How To Cook?

To prepare the spiced fig and lemon honey preserve, wash the figs and pat them dry. chop them into small pieces.

In a heavy-bottomed saucepan, combine the honey and chopped figs. cook on high heat for about 5 minutes, until the figs start to caramelize slightly.

Reduce the heat to low and add the lemon juice, lemon zest, red chilli flakes, and demerara sugar to the saucepan. stir well to combine.

Continue cooking the mixture on low heat until the figs become soft and the flavors meld together. stir occasionally to prevent sticking.

To test the readiness of the preserve, dip a chilled spoon into the boiling mixture and hold it above the pan. if the preserve falls from the spoon like a sheet rather than in drops, it has reached the desired consistency.
